This classy, smooth as silk Cabernet hails from the famous soils of Langhorne Creek. Hurry to reserve your share of this tiny volume red. Dark crimson in the glass, with enticing aromas of blackberry, ripe red cherry, red capsicum and fresh herbs. Hints of dark chocolate sit on the back palate and run to a long, smooth, complex finish. No need to cellar (though you can, for another 3 years or so if you like). It's drinking beautifully now. "Nose of black fruit, combined with stone fruit, a vegetal touch and noble minerality. The premium grapes selected for the Fossilbed Cabernet Sauvignon 2022 were from vineyards planted in the ancient soils of the Limestone Coast. Stretching from the Victorian border to the Younghusband Peninsula in South Australia, the Limestone Coast is one of Australia's most versatile wine growing regions. Settled since the early 1840s, much of the region was submerged by sea as recently as 2 million years ago. The deep limestone deposits created by coral and ancient sealife are now home to Australia's most important source of fossils and are classified as a World Heritage site. This handcrafted Cabernet Sauvignon balances rich and lush black fruit (cassis and plum) with vanillin baking spice oak. Ready to enjoy now, but has the hallmarks of a wine which can cellar for a few years.

It's made by Australia’s hottest winemaker, John Quarisa (or Johnny Q as he’s known). For 20 years John worked long hours at some of Australia’s best wineries, including McWilliam’s, Casella and Nugan Estate. He always dreamed of setting up on his own but kept putting it off. That was until wife Josephine ‘spat the dummy’ (as they say in Oz) and told him to get a move on! Now he works even longer hours, but making his own wine, at his own winery. John and Josephine Quarisa’s passion extends far beyond the boundaries of the wine industry, to their home, their family, their hobbies, heritage and through the simplest things associated with everyday life. This life long, energetic partnership started at school when John and Josephine became high-school sweethearts. Over the years they have grown and developed and are still laughing and loving every step of the way. As a winemaker for over 30 years, John’s winemaking has been awarded some of Australia’s greatest accolades including both the Jimmy Watson and Stodart Trophies. John’s experience drove him to develop a range of wines that are down to earth, full of character and approachable. Also true of John himself! This Shiraz is intense cherry red with purple hues. Aromas fresh ripe berries are complemented by rose petal and orange blossom. The same ripe berry flavours are given added complexity on the palate thanks to well-integrated vanillin oak and spice notes. Long, smooth and irresistible.
