Wine Summary
<p> The fruit from this vineyard was picked during the cool of night in several stages throughout to retain freshness. The fruit was then chilled, pressed and settled and the clear juice was racked after 3 days and cold fermented in a combination of stainless steel and 1, 2 and 4 year old French oak hogsheads. The wine then spent eight months on lees, with occasional stirring. </p> <p> Bright citrus is underpinned by subtle aromas of creamy stonefruit and light toasty oak. Following on from the bouquet, the palate has a delightful richness that is balanced nicely with a structured acid backbone. Flavours reminiscent of summer melon are complexed by fresh citrus, and the wine finishes fine and long. A gorgeous match for roast lemon chicken. </p>
